An easy breakfast recipe that’s perfect for brunch, lunch, dinner or weekday breakfasts.
Ingredients
6 large eggs
2 tbsp water
1/2 tsp salt
Pinch black pepper
1 onion chopped
2tbsp butter for frying
1 clove garlic crushed
1/2 cup mushrooms chopped
1 cup baby spinach leaves
A handful of basil leaves
A pinch of ground nutmeg
1/2 cup feta
Method
Break the eggs into a mixing bowl, add water and beat lightly
Place the onion and butter in a frying pan and cook over medium heat for 3 min
Add garlic, mushrooms and cook 2 min
Add spinach leaves, basil and nutmeg cook for 1 min
Poor the egg mixture and cook for 1 min - but do not stir
Reduce the heat
Crumble fetta over the top
Continue to cook without stirring
Transfer the pan to the oven and finish off for a min under the grill
Garnish with fresh basil
